I have tried all the various Mezzadri maturities in the 11 years I have been ordering from the Azienda. The 60-month is the best. The flavor is at the peak, the tyrosine crystals are everywhere but it can still be sliced and shaved. I use a food processor to grate a kilo at a time though, because that way my arms do not get as tired as they would with manual grating.
